Raspberry & White Chocolate Cheesecake
Heavenly, mouth watering and amazing, are just some of the words that have been used to describe this raw vegan white chocolate and raspberry cheesecake!
I was really pleased to hear that as it represents my first departure from what I call 'smooth' filling cheesecakes. All my cheesecakes thus far have had their filling ingredients blended until silky smooth. The filling in this cheesecake is made from cashews blended until smooth, but this time I've also folded in chunks of raspberry for added texture. The topping is also a delicious first.
The raspberry coulis is made from one of my favourite superfoods, chia seeds. Chia seeds reduce food cravings, help you stay hydrated, lower blood pressure & are rich in omega-3 fatty acids. With it's chocolatey almond base, velvety smooth rich white chocolate centre and perfectly tart raspberry chia coulis to finish, this cheesecake sounds too delicious to be healthy, but healthy it is!
