Vegan Lemon Bombe Tartlet (Set of 6 individual tartlets)

This delicate tartlet is a dessert lovers dream! Inspired by my vegan lemon mousse idea, I decided to go all the way when it came to upping the standard of my desserts.
The base is more substantial than my standard small cheesecakes, forming a bowl like shape that you could just pick up and eat. Made from either vegan and gluten free shortbread or ginger biscuit, it's crunch is perfectly complimented by an infusion of tart organic lemon zest.
Topping that is a layer of vegan lemon curd. Gently topping this layer of curd is a lemon cheesecake dome, made with my signature silky smooth blended cashew filling, blended with aquafaba (chickpea brine) to form a mousse. This is then drenched with another layer of lemon curd. To finish off the tartlet is then piped with more lemon mousse and hand finished with organic lemon zest pieces, chocolate sculptures and my signature dark chocolate plaque.
Not only is this dessert a delight to look at, I love it's healthy credentials too! Organic lemon juice and zest and cashews, and if you choose the ginger biscuit base, you get a double hit of inflammation-busting goodness - healthy never tasted so indulgent!
