Avocado & Passionfruit Cheesecake

This cheesecake was inspired by a conversation with the Yasmine telling me about the very popular drink in Uganda. As is often the case, this got my cogs turning and got me thinking, "how can I turn this into a Cheesecake?"
So, I got in my kitchen, created a sample, and gave it to the taste testers, and to my surprise, every single one of them loved it! And I genuinely mean I'm surprised, as I wasn't sure it would work to be honest, but taste buds don't lie!
The base on this cheesecake is only available on my own non-gluten, vegan ginger biscuits. That's because one, ginger is one of Mamma Nature's best inflammatories. Also, the drink often has ginger added to it because it really compliments the other flavours. The richness of the avocado is cut through by the sharp, tartness of the passionfruit filling. This is made from my usual signature Cheesecake base of soaked and blended cashews, which is then blended with freshly squeezed passionfruit, and whipped until light and airy. Super tart tamarind is also for a further sweet-soar kick.
I'm trying to be more "waste-less", so this cheesecake is also topped with empty passionfruit shells, piped full of more passionfruit filling and finished off with some passionfruit seeds.
Ingredients:
Avocado*, Cashews, Coconut oil*, Coconut cream*, Light amber agave nectar*, Unrefined icing sugar, Passionfruit juice, Sunflower lecithin, Aquafaba* (Chickpea brine), Macha powder*.
Gluten free, vegan ginger biscuit base: Unrefined caster sugar, Dairy Free Sunflower Spread** (Vegetable Oils (Sunflower (21%), Rapeseed, Sustainable Palm), Water, Salt, Emulsifier – E471***, Sunflower Lecithin, Preservative – Potassium Sorbate, Acid – Lactic Acid, B Vitamins (Niacin, B6, B2, Folic Acid & B12), Flavourings, Natural food colours – Annatto, Curcumin), Gluten free flour, Ground ginger, Ground cinnamon, Bicarbonate of soda, egg replacer (Potato starch, Tapioca Flour, calcium carbonate, citric acid).

** Sunflower spread recipe is free from dairy, lactose, gluten and hydrogenated fats or partially hydrogenated fats or fatty acids, and is Vegan Society accredited.

All my products are prepared in a clean area and with separate utensils to those used with ingredients that may contain allergen traces to minimise cross contamination. However, I cannot fully ensure that my environment is totally free of allergen traces. To be on the safe side, if you (or anyone you may give my treats to) have a serious allergy to any of the above allergens, or one which could cause you to have a major allergic reaction, sadly the only way for you to be 100% safe is not to consume any of my treats.

As it is a perishable product, I will not be able to leave it anywhere where it can't be kept refrigerated. If you're outside of my delivery area, you can collect it from me instead.
