Raw Strawberry & Hibiscus Cheesecake

This is a no-bake strawberry cheesecake like no other! Crammed full of real strawberries and their juice throughout the cheesecake, not just on top!
Your base can be either my usual mix of nuts, cacao and coconut oil, or a gluten free vegan biscuit base. The filling, a combination of locally-sourced (where possible) organic British strawberries (my taste testers said they tasted better, and I agree), cashews and agave blend together deliciously into a creamy texture. The sweetness of the organic strawberries is deliciously balanced by the tartness of the hibiscus, making it slightly tart and fruity with a hint of sweetness!
My latest recipe also adds some aquafaba (chickpea brine), making it smoother and lighter, and so deliciously tasty that you wouldn't believe it has no eggs, dairy or refined sugar!
Proof that with just a few 'real' ingredients, you can still have your decadent dessert and eat it!
This cheesecake is also available with a gluten free, vegan shortbread biscuit base! Just make your preferred choice when ordering.
Also available in a 9" version - serves up to 12 people.

Nut Base: Raw Almonds, Raw Cacao powder*, Dates, Raisin (Raisins, Sunflower oil), Raw Coconut oil*, Raw Agave nectar*, Unrefined Pink Himalayan sea salt.
Gluten free, Vegan Shortbread Biscuit Base: Gluten free flour, Dairy Free Sunflower Spread** (Vegetable Oils (Sunflower (21%), Rapeseed, Sustainable Palm), Water, Salt, Emulsifier – E471***, Sunflower Lecithin, Preservative – Potassium Sorbate, Acid – Lactic Acid, B Vitamins (Niacin, B6, B2, Folic Acid & B12), Flavourings, Natural food colours – Annatto, Curcumin), Unrefined castor sugar, Xantham gum.
