Crammed full of real strawberries and strawberry puree, this cheesecake, is a strawberry lovers dream!
The filling is a combo of, where possible, locally-sourced organic strawberries (my taste testers said they tasted better, and I agree), cashews and agave blend together into a creamy, delicious texture. The sweetness of the organic strawberries is beautifully balanced by the tartness of the hibiscus, making it slightly tart and fruity with a hint of sweetness!
I also add some aquafaba (chickpea brine) to the recipe, making it smoother and lighter with only plants. Proof that with just a few 'real' ingredients, you can still have your decadent dessert and eat it!
This cheesecake is also available with a non-gluten, vegan shortbread biscuit base! Just make your preferred choice when ordering.

As it is a perishable product, I will not be able to leave it anywhere where it can't be kept refrigerated. If you're outside of my delivery area, you can collect it from me instead.
